Vegan Carrot Halwa (Sweet Carrot Pudding)
3 – 4 servings
Carrot – 2 cup, grated
Coconut milk – 2 cup
Palm Jaggery powder – 1/4 cup (adjust as desired)
Cardamom powder – 1/2 teaspoon
Broken cashews and Raisins – 2 tablespoons each
Pistachios – garnishing (optional)
- On a low medium flame, heat a pot and add grated carrots and coconut milk. Bring the mixture to a boil and allow it to simmer, stirring occasionally.
- The grated carrots will cook in the milk and will start to reduce. When it has reduced to 80%, add cardamom powder and palm jaggery powder and stir well.
- Continue to cook until the mixture has dried up stirring the halwa in between. Towards the end add chopped cashews and raisins. Garnish with pistachios.
- Serve warm or cold and enjoy! The halwa stays good in the fridge for about a week.
