Easy Vegan Snickers (No Bake, Gluten Free)

These gooey chewy crunchy chocolaty rich vegan snicker bars are just as delicious as the real thing. Made with wholesome ingredients, they are no bake, gluten free, raw and refined sugar free. You would be surprised at how quick and easy this recipe comes together. You cannot go wrong even if you over indulge on them I promise 😉

Ingredients

  • Dates Caramel
  • Dates, medium sized – 12 to 13 or 2/3 cup

  • Peanut butter – 2 Tbsp

  • Coconut oil – 1 tsp

  • Vanilla extract – 1 tsp

  • Pinch of salt

  • Nougat / Base layer
  • Oats flour – 1/3 cup

  • Almond meal – 1/3 cup ( you can use oats flour instead of almond meal )

  • Dates caramel paste – 2 Tbsp

  • Other
  • Dry roasted peanuts – 1/4 cup

  • Vegan dark chocolate – 150 gms

  • Coconut oil – 1 tsp

Directions

  • In a grinder, grind all the ingredients mentioned in Dates caramel into paste. This is our dates caramel paste
  • In a mixing bowl, combine dates caramel paste, oats flour, almond meal and knead well to form dough.
  • Take the dough and press it on a plate and make it rectangular in shape. This is our nougat layer/ base layer.
  • Now spread the remaining dates caramel on top of the nougat layer.
  • Now layer roasted peanuts on top of dates caramel layer. Place this in the freezer for an hour until firm.
  • When they are firm, take them out of the freezer and cut them into bar pieces.
  • Now melt 150 gms of dark chocolate with 1 tsp coconut oil in a bowl, placing the bowl over a pan of boiling water.
  • Drizzle the melted chocolate on the bars covering all the sides and place them in the freezer until the chocolate is hardened completely.
  • Serve the vegan snicker bars and enjoy!
