Tabbouleh is a Mediterranean salad traditionally made with parsley leaves, burglar, tomatoes, herbs and seasonings. In this recipe I’ve replaced burglar with millets which makes it completely gluten free and equally tasty and rich. Millets are a great inclusion to the diet as they are full of fibres and packed with nutrition. The flavours of this salad is refreshing and satisfying. With millets and fresh herbs and veggies ,this salad is so healthy for you as it’s full of antioxidants and immunity boosting. Make this as your main course dish by increasing millet in the recipe or use it as a side dish, either way they taste absolute best!

Millet Tabbouleh Salad (Gluten Free)

Ingredients
Parsley – 3/4 cup, finely chopped
Mint leaves – 1/4 cup, finely chopped
Tomato – 1/4 cup, deseeded, finely chopped
Cucumber – 1/4 cup, deseeded, finely chopped
Olive oil – 3 Tbsp
Lemon juice – 1 -2 Tbsp ( as needed )
Ground cumin – 1/2 tsp
Pepper to taste
Salt to taste
Cooked millet – 1/4 cup
Directions
- While you chop the leafy greens and veggies, cook the millet in a pot and keep ready. Make sure the millets are not overly cooked.
- In a mixing bowl add finely chopped parsley leaves, mint leaves, tomatoes, cucumber, olive oil, lemon juice, ground cumin, pepper, salt and mix well. As the millet cools down, toss into the bowl and combine well. Adjust the flavours as needed.
- Serve and enjoy!
